Ingredients
Salad
6ozbaby spinach or spinach mix(170 g)
4ozgrilled chicken, sliced
3ozstrawberries, sliced
1ouncepecans(raw or toasted)
1ouncecrumbled feta cheese
2tablespoonred onion, thinly sliced
Vinaigrette Dressing (makes ½ cup)
¼cuplight olive oil(or avocado oil)
1tablespoonbalsamic vinegar
1tablespoonred wine vinegar
1tablespoonwater
2teaspoonminced red onion
½teaspoonsweetener
⅛teaspoondried thyme
1pincheach salt and pepper
Instructions
Mix the dressing and set aside. (I like to make the day before so the flavors develop.)
Slice the chicken, strawberries and onions.
Layer the ingredients in two bowls and pour the dressing over. 7.5 net carbs per salad.
