1/2poundcauliflower florets8oz/227 g
1/4poundred bell pepper4oz/114g, about 1 whole pepper
2tablespoonsbutter or gheeadd after cooking
1tablespoonred wine vinegar15ml
Combine all ingredients except for the butter into a microwave safe bowl, cover and cook in high for 3-4 minutes depending on your microwave. Carefully vent a corner and drain the liquid. Add two tablespoons of butter or ghee to the hot vegetables and mix to coat. Serve
In a medium-large pan over medium high heat, add the oil. Toss the veggies with the vinegar and garlic. When the oil is hot, saute the veggies until crisp tender - about 5-6 minutes. Salt and pepper to taste. Add the butter and serve
Preheat the oven to 400F. Combine all of the ingredients except for the butter onto a sheet pan and roast for 15-20 minutes. Remove from the oven, toss with the butter and serve.
