Low carb Buffalo chicken dip is a popular low carb appetizer recipe that's easy to make and tastes like Buffalo chicken wings with creamy blue cheese dressing.

3cupsshredded chicken (rotisserie or cooked chicken breast)
8ouncescream cheese, cut into pieces
1cupshredded mozzarella cheese
1/3cupFranks Buffalo Sauce
1/2cup creamy Ranch salad dressing (good quality like Lighthouse)
2tbspchopped green onions
2tbspchopped green onions (or more to taste)
1/3cupblue cheese crumbles
Melt the cream cheese and mozzarella in a medium frying pan or pot. over low heat.
Stir in the Buffalo sauce, then shredded chicken.
Add the ranch dressing and green onions, stirring until incorporated. Heat until the mixture is hot. Place in a warmed serving dish or in a small appetizer sized crock pot.
Top with blue cheese and scallions.
Makes about 3 1/2 cups with approximately 5 tbsp of dip per serving. For other cooking methods (oven, microwave, crock pot) see post.
[NOTE] I suggest using rotisserie chicken or fresh cooked chicken breast. I tried using canned chicken in one of my tests and it lacked a lot of flavor. Also, using blue cheese dressing instead of a good quality ranch dressing makes the dip taste overly sour and sharp. It's best to save the blue cheese as garnish over the top.
