Chia seeds are cheeky little things aren't they? No matter how carefully you avoid getting them everywhere, you will undoubtedly find a few chia seeds lodged behind your toaster after using them. Even if your toaster is in a different room.
But trust me, the mess is so worth it for this chocolate chia pudding!
My healthier twist on chocolate pudding is made keto, vegan, and gluten-free thanks to some chia seeds! And not to mention, it's chocolate flavored, which automatically makes it a winner.
What are chia seeds?
Chia seeds come from the plant salvia hispanica, which is in fact a member of the mint family.
The best thing about chia seeds is that in the presence of liquid they form a gel called mucilage. This is what helps to thicken our blueberry chia seed jam, as well as turn this chia pudding into a deliciously creamy keto dessert!
How to make chocolate chia pudding...the easy way!
Chia pudding is something which looks impressive but is ridiculously easy to make. I've found that the quickest and cleanest way to make chia pudding is to make it in a mason jar. Simply add all of the ingredients to your mason jar and shake to combine!
To allow the chia pudding to thicken, we need to chill it in the fridge for at least 30 minutes. It's a hard wait, but it's so worth it - the end result is perfectly creamy and thick!
Recipe variations:
- To make this keto chia pudding thick and creamy, I like to use coconut milk as the liquid. For a lighter option, use almond milk.
- I like to serve my chocolate chia pudding with coconut yogurt, fresh berries and chocolate shavings. Feel free to use any toppings of your choice - from seasonal fruit to keto brownie pieces!
- If you like coffee, you'll love my coffee chia pudding too! Just make the appropriate low carb sweetener sub.

Keto Chocolate Chia Pudding (vegan)
Ingredients
- 2 tablespoon low carb sugar (Sukrin:1, Swerve, Lakanto, Truvia, or Besti)
- 1 tablespoon Cocoa Powder (sift before measuring)
- 1 teaspoon Vanilla Extract
- 1 cup Coconut Milk (from a can) (or Almond Milk for less calories)
- ¼ cup Chia Seeds
Instructions
- Add the cocoa powder and sweetener to a mason jar. Close the lid and shake well to remove any lumps.
- Add the coconut milk and vanilla extract to the mason jar. Close the lid and shake to combine.
- Add the chia seeds to the jar and shake again. Once the mixture is well combined, transfer the jar to the fridge.
- Chill for at least 30 minutes.
- Serve the chocolate chia pudding in your favourite jars, with coconut yogurt and seasonal fruit. Enjoy!
- Net carbs per serving: 5g

- Prepared chia pudding will store in an airtight container in the fridge for up to 1 week.

I made this chia pudding with the exact quantities of ingredients- I just find 2 tablespoons of sweetener is way too sweet and leaves a bitter aftertaste. My second batch I used only 1 tablespoon sweetener and it was plenty sweet enough and not so much of an aftertaste. In fact I think 2 teaspoons would be a better measurement. Please consider altering your recipe as ingredients are expensive and I ruined 3 x 330ml mason jars of it…

Easy to make but rather bland. I was looking for something relatively healthy to kill my sweets craving.While nice enough this time of recipe does not achieve that fully. It is dense and filling which is great but I found the addition of a bit of brown sugar or honey gives it just enough sweetness to hit that dessert craving. 3 out of 5 stars for being easy, quick, and healthy.

Everyone's palate is different, so absolutely add more sweetener if you need it sweeter. Chia seeds dull flavor a little so a pinch of salt and a little sweetener may be just what you need to make it to your taste. Thank you. -Kim

Hello. Great question. Thinks like chia seeds, flax seeds, oat fiber and coconut flour have a lot of fiber. Fiber isn't supposed to affect blood sugar so convention is to subtract the fiber from the total carbs leaving a "net carb" number. This chia pudding has 5 net carbs per serving. Recipes that include ingredients that are high in fiber, are higher carb. However, I have many more recipes that are very low in carbs, too.
There are two ways to count carbohydrates on the keto diet: 1. Count net carbs and keep them to 25-35 per day (subtract fiber and any carbs from erythritol, which contributes no calories and doesn't effect blood sugar.) 2. Count total carbs (include the fiber carbs) and keep them below 50 per day.

Making this the second day running, I added a bit of cream as well as coconut milk as on keto and having a job to eat enough fat. This is delicious and - I know it sounds boring - but I had it for breakfast and lunch yesterday, with some blueberries and chopped strawberries and found that I didn't need anything to eat in the evening so I didn't have dinner, so, unwittingly did a fast.
Woke up this morning still not hungry, I will use this as a go to when too busy to cook.
I had a nice 2lb weight loss when I weighed this morning. It's 10 o'clock now and I reckon I can hold out until 12, so I will have done a 24 hour fast without trying :-)

My coconut milk is in a can but super thick is that how it should be for this recipe?

You might have coconut cream, Brenda. If I give my can (in the winter months) a good shake, the coconut milk will be thick because the layer coconut cream mixes into the thinner milk or water. You don't need the coconut cream to make this, just coconut milk. -Kim

I ve done this recepie 4 times now. First time I only had coconut cream in a can and used only the liquid and it worked OK. I then tried using some of the left over of the coconut cream and it turned it into a sort of a heavy mousse. Then I used coconut milk in a can and worked beautifully again! Did exactly the same with the canned coconut milk and it turned out again like a very thick sort of mousse. Wonder why this time...and hint?
